Friends, I have yet another delicious recipe for you! I find myself craving my favorite Thanksgiving food year round. My favorite dish for the holiday is candied yams. My mom mixes yams, brown sugar, pineapple chunks, and pecans- but its not over there! She then tops the whole thing with marshmallows and allows them to slowly toast in the oven. It. Is. Divine. So, naturally, every time I eat a sweet potato I wish it was just like that dish.
While cruising Pinterest recently, I saw something that inspired me so deeply that I jumped up and created this recipe right then and there!

Thanksgiving Inspired Sweet Potatoes
Serves 1
Ingredients
1 sweet potato (yam)
1 tbsp butter
1 tbsp apple sauce
1 1/2 tbsp brown sugar
1/8 tsp salt
Freshly cracked pepper, to taste
2 tbsp chopped pecans (optional)
Mini (or regular) marshmallows, to top
Directions
Prick the potato all over with a fork and roast however you normally do so (on the grill, in the oven, whatever). Then, slit the potato open and scoop out the soft potato insides, careful to not rip the skin too much. Transfer the soft flesh to a bowl and mix with the butter, apple sauce, brown sugar, salt, pepper and pecans. Once mixed, carefully re-stuff the potato skin and top very generously with marshmallows. Bake in a toaster oven until the marshmallows are golden brown. Enjoy!!
