A mid-summer heirloom tomato salad with fresh fava beans, basil, and an herbs de provence vinaigrette. 

The morning air carries a thick, warm, heady breeze from the night before, and all the plants seemed refreshed. Those are my favorite mornings in the summer; post-monsoon, the air vibrates with energy, nurturing our garden and our hearts. The wind buzzes with seeds of change, and I feel it.

Heirloom Tomato Salad with Herbes De Provence Vinaigrette Ingredients

Tomatoes are bursting in the farmers markets, and the smell of them is exactly what tomatoes should smell like. Earthy and vibrant, I knew these tomatoes needed just a touch of a light vinaigrette to really shine. I paired them with fresh fava beans and thinly sliced red onion for a bit of a bite and texture. I dare say, this is the perfect summer salad.

Toasted Coconut & Vanilla Popsicles

Summertime is the best time for cold treats, like these decadent, smooth popsicles filled with freshly toasted coconut and pure vanilla. These are perfect to enjoy poolside or for mid-summer storm watching from the patio.

Coconut popsicles have always been my favorite. When I ordered these popsicle molds, I knew that the first ones I would make would be coconut. Not just any coconut though, not your run-of-the-mill plain coconut. Oh no, these would be creamy and flavorful and rich, with simple yet luxurious flavors of vanilla and nutty toasted coconut.

If you want to get really fancy, these would be even better with vanilla beans fresh from the pod. I decided to keep it simple and just use pure vanilla extract.

Toasted Coconut & Vanilla Popsicles

Ingredients

1 cup vanilla coconut milk (I used Silk)
1 can unsweetened coconut milk
1 cup sweetened coconut flakes
1 tsp vanilla
3 Tbsp brown sugar

Directions

Heat a dry pan over medium heat and add one cup of coconut flakes. Stir frequently until golden brown and then remove to a bowl and let cool.

In a small saucepan, mix together vanilla coconut milk, unsweetened coconut milk and brown sugar. Stir over low heat just until the brown sugar dissolves. Remove from heat and mix in vanilla. Combine with toasted coconut and pour into popsicle molds. Freeze until solid, about 5-8 hours depending on the size of your popsicles.

Turkey & Smoked Gouda Burgers

These turkey burgers are one of my favorite recipes that I have created so far. They’re incredibly juicy and flavorful! The first time that I made them was for a game night and potluck dinner with my friends. I served them topped with fresh arugula and grilled onion slices, and they have been a staple in my house ever since.

Turkey is naturally a leaner meat than beef, so when making turkey burgers you have to add ingredients in order to supplement the moisture that fat provides for beef burgers. Because of this, I add a few tablespoons of extra virgin olive oil and lots of smoked gouda, cut into small pieces so that each bite oozes with cheese. It is divine! Coupled with spices, fresh chilis and sauteed onions and garlic, I have to say this is my favorite burger hands down. 9 times out of 10, I snack on at least one patty before the rest reach the table. They’re just that good.

Turkey & Smoked Gouda Burgers

Makes about 12 burgers
Time: 30 minutes

Ingredients

1 1/2 lbs ground turkey meat
1 whole onion, diced, plus 2 onions, sliced into 1/2 inch slices
4 medium-sized garlic cloves, minced
2 fresno chilis*, diced
5 slices of smoked gouda cheese (or about 6 oz), cut into small pieces
1/2 tbsp chopped fresh basil leaves
2 tbsp extra virgin olive oil
1/2 tsp smoked paprika
1 tsp onion powder
2 tbsp onion soup mix
1 egg
Butter + EVOO for cooking, S&P

Directions

Heat a large sauté pan over medium heat. Add 1 tbsp butter + 1 tbsp olive oil. When the butter has melted and the pan is hot, add the diced onion. Sauté until the onion is transluscent and then add the 4 minced garlic cloves and stir. Sauté for one more minute and then transfer onion and garlic to a bowl to cool.

While onion and garlic are cooling, put all of the remaining ingredients into a large mixing bowl. You can also add any of your favorite spices here (in addition to the ones already listed). When the onion and garlic are cool enough to touch, add them to the mixing bowl and mix together all ingredients. Form into patties. Heat the same pan from earlier on medium-low heat and lightly oil with EVOO. When the pan is heated, add as many patties as the pan will fit. Cover the pan and check in 5 minutes. Monitor the burgers (try to keep them covered as much as possible) until one side is browned, and then flip the burger and cover again. Use a meat thermometer to determine when the burgers are done.

While the burgers are cooking, take the 1/2 inch onion slices and coat each side with olive oil, salt and pepper. If you have your grill on, you can grill the onion slices (my preferred method). If not, you can heat a grill pan or skillet on high and quickly sear each side of the onion to lightly cook it.

If you are grilling your buns, do so now. Top each grilled bun with one burger patty, one grilled onion slice, and fresh arugula. Enjoy!

Watermelon Mojitos

With the hot weather lately, all I want to do is lounge by the pool with my friends and sip on some delicious drinks. This beverage really hit the spot; it tastes so fresh and is very simple to make. Watermelon has been on sale like crazy in our area, and I’ve been trying to find some creative uses for it. If you prefer to have it without alcohol it is delicious that way as well!

This was a breeze to whip up, it came together in no time! It would be a great cocktail to have at a backyard bbq, or just to have on a weeknight with friends. You could even make the watermelon juice in advance so that you could prepare this cocktail even faster at your next summer party.

Watermelon Mojito

Makes about 4 drinks
Time: 10 minutes

Ingredients

2 cups fresh watermelon, cubes
3 large strawberries
20 mint leaves
Juice of 1/2 lime
agave nectar, to taste
Melon flavored (or plain) rum
Lime wedges, mint leaves, to garnish

Directions

In a blender, combine watermelon, strawberries, mint leaves, and lime juice. Blend on high until completely blended, about a minute.

Strain mixture through a fine mesh sieve to extract all of the juice (should make 1.5-2 cups). Combine 5-6 oz watermelon juice with 1 oz rum and about 1/2 tsp agave nectar (more agave if you prefer a sweeter cocktail) in a cocktail shaker with ice. Shake vigorously until chilled and pour into a glass. Garnish with mint leaves and a lime wedge. Enjoy!
